For oyster soup, remove the oysters from the shell with the juice. Put them in a saucepan with the butter.

Mix some skim milk with the cornmeal and add this mixture to skim milk. Add fish stock and put everything together in the saucepan with the oysters.

Heat the broth until very slightly hot, let it simmer for 25 minutes, stirring occasionally.

Season the oyster broth with pepper and salt and serve with white bread.
