For the cherry-banana-mint jam, cut the bananas into small pieces. Remove the stems from the After Eight mint and chop the leaves finely. Mix the fruit and the mint thoroughly with the jelling sugar, leave to infuse overnight.

Choose the size of the pot so that it is only half filled with the jam mixture. Now bring the mixture to a boil.

When the jam boils, look at the clock and boil for 4 minutes until bubbly. Stir constantly to keep it from sticking.

Pour the hot jam into hot rinsed twist off jars to the rim, twist shut, place on the lid and allow to cool.
