For the marinade:

For the spareribs, first mix half of the citrus juice and all remaining ingredients for the marinade and season strongly with salt.

Remove the fat from the ribs. Simmer in salted water with the remaining lemon and orange juice for about 30 minutes, skimming off any foam that forms.

Pour the marinade over the ribs and let them marinate overnight.

Grill the spare ribs on a hot grill for 10-15 minutes on all sides, turning frequently and brushing with marinade.
