For the poultry sausage on sauerkraut, skin and chop the onions. Heat the clarified butter in a casserole, add the onions and sauté until translucent.
Then add the sauerkraut and cook for 15 minutes with the lid closed. In the meantime, heat the oil in a frying pan and fry the sausages on all sides until golden brown.
Arrange the sauerkraut on warmed plates. Arrange the sausages on top.
