For fork bites with Russians and apple first make mayonnaise according to the basic recipe.

Peel the carrots. Cut one carrot into thin slices and cut out hearts from it with a small cookie cutter. Finely dice the rest and blanch.

Using a sharp knife, cut 12 of the small vinegar candles several times lengthwise and carefully fan them out.

Wash all four apples and remove the core with a corer. Slice two apples into very thin, round slices (for the apple layer) and store temporarily in lemon water.

Cut remaining apples into small cubes, peel onion and chop finely.

Set aside about 8 tablespoons mayonnaise, carrot hearts, cucumber fans and apple slices for decoration.

Mix the apple, carrot, onion and gherkin cubes with the mayonnaise. Season to taste with gherkin juice, Russen liquid (from the jar), salt and pepper.

Carefully roll up the Russen.

Now layer the individual ingredients in glasses or small bowls: First, put a layer of mayonnaise, on top of it loosely place the slices of pickles all around, and on top of it spiralize the apple slices.

Pour the mayonnaise (8 tablespoons) into a pastry bag and place small “doughnuts” in the middle of the apple slices. Place three rolled Russians in the center and decorate all around with gherkin fans and carrot motifs to taste.

Soak gelatine leaves according to package instructions and dissolve in the hot soup.
