Rinse the potatoes and brush well, put on the sea salt and cook in the stove at 180 degrees for about 20 minutes. Clean the mushrooms and chop them. Finely dice shallots and pancetta. Fry bacon, add mushrooms and shallots, brown, season with salt, pepper and a little nutmeg, stir in thyme. Carefully hollow out the potatoes, mix the potato leftovers with the crème fraîche, the Parmesan cheese and the mushrooms, fill the amount into the potatoes and bake for another 10 minutes in the oven. Season the goat curd with salt, chives, pepper and a little sugar and bring to the table.
