For the Saddle of Lamb in Puff Pastry, salt and pepper the rack of lamb and sear it all over in hot oil. Finely dice the mushrooms and sauté in butter in a saucepan with the shallots until the liquid has completely evaporated. Now add half of the cream and let it boil down. Whisk the remaining cream with 4 yolks and stir into the mushrooms until the mixture thickens. Season with salt, pepper and parsley and chill the farce.

Spread the meat with the cold mushroom mixture and wrap it in the rolled out puff pastry. Close well and brush with yolk. Place on a baking tray covered with baking paper and bake in a preheated oven at 200°C for 25 minutes. Allow to rest briefly and then slice the loin of lamb in the puff pastry, preferably with an electric knife.
