For the potato strudel, wash potatoes and add cold water and a pinch of salt and cook until not too soft. Rinse with cold water, let cool and peel. Roughly grate or cut into small pieces.

Heat oil or lard in a pan and brown the potatoes well on both sides. Season well with salt, some pepper and marjoram or other herbs. Let cool down a bit.

Place the strudel sheets on top of each other on a damp tea towel, brush with melted butter and spread the cooled potato mixture on about one third of the strudel dough surface.

Roll up with the help of the tea towel and lift onto an oiled baking tray. Brush with egg yolk and bake in the preheated oven at about 200 °C for about 30 minutes. Let the Erdäpfelstrudel cool down a bit and serve lukewarm, possibly with salad.
