For the curry sauce, peel the apple, remove the core and cut into inn small cubes. Peel and finely chop the onion. Cook both with the buttermilk, cream, curry powder, sugar and white wine for 15 minutes. The apple pieces should be half cooked and mushy.

Whisk in oil, vinegar and mayonnaise and dilute with 2 tablespoons of hot water if necessary.

Wash and chop the chives and stir into the sauce.

The curry sauce is suitable for poultry salad, ice cream salad, pasta salad shellfish and veal.
