An asparagus recipe for gourmets:

Peel asparagus spears and cut woody ends into small pieces. Cut spears diagonally into 3 cm long pieces. Peel potatoes and cut into wedges. Peel carrots and cut into pieces. Finely dice onion, peel and grate fresh ginger, sauté both in 1 tbsp butter.

Sauté carrots, potatoes and currv powder briefly. Season with salt and pepper. Add apple juice and vegetable soup. Cover and cook on medium heat for 10 minutes. Stir in sour cream or crème fraiche and 1 tsp flour, add asparagus spears and cook for another 10 minutes with lid on. Season with lime juice, salt, pepper and curry. Add chopped chervil.

Serve with roasted long grain rice.
