For the apples under the hood, peel apples, cut them in half, remove the cores, stew with white wine, sugar and lemon zest until soft in the core.

Butter an ovenproof casserole dish, layer in the apples, top with cookies and drizzle with a little apple juice. Beat the egg whites with powdered sugar and vanilla sugar until stiff and spread over the cookies.

Bake the apples under the cover in the oven at low heat for about 40 minutes. Divide into slices and serve hot or cold.
