A great pasta dish for any occasion:

(*) Veal escalopes with prosciutto and sage “Jump into your mouth” is the name of these tender veal escalopes with raw prosciutto and sage.

Lay out the cutlets on the table, season with salt with pepper and top each with a tranche of ham and 1 sage leaf. Pin everything with wooden toothpicks. Turn lightly in the flour on both sides and fry in the butter on both sides, remove from the frying pan and keep warm.

Melt the gravy with dry white wine, bring to a boil, add a tiny bit of meat extract to taste and bring to a simmer. Spread the sauce evenly over the saltimbocca.

Serve: Pasta, mashed potatoes, risotto, or possibly steamed vegetables.
