Bavarian sausage salad is prepared by first skinning the sausage and cutting it into small pieces. Then clean the radishes and cut into slices. Peel the onions and cut them into rings. Cut chives into rolls, clean spring onions and cut rolls as well. Finely chop the gherkins. Put all the ingredients, including the sausage, in a bowl.

Mix mustard with cucumber vinegar water, fruit vinegar and olive oil properly and season with pepper and sea salt.

Pour the salad dressing over the sausage salad and stir well. Let the salad stand for about an hour.

Wash leaf lettuce properly, drain and place on a flat plate. Bavarian sausage salad is served on the bed of lettuce and covered with the remaining marinade.
