Instructions:

Soak the gelatin in water. Melt the butter not too hot, add the sugar, the juice of the lemons and the grated zest of the lemons. Whisk the eggs thoroughly and add them through a sieve. Squeeze out the gelatin and add it as well. stir everything together thoroughly over medium heat until you have a cream that spreads well. Pour into sterilized jars. Refrigerate.

Makes an excellent spread for rolls and toast.
