For the fiery beef skillet with quinoa, bring the quinoa to a boil with twice the amount of salted water or soup. Simmer for 15 minutes over low heat.

Cut the meat into bite-sized strips. Remove seeds from chili pepper and cut into thin rings. Finely chop ginger. Mix honey, lime juice, soy sauce, cumin and 2 tablespoons sesame oil. Toss in the meat, stir well and let marinade for at least 30 minutes.

Cut the spring onions into rings, using the greens. Peel and thinly slice the carrots. Cut the bell pepper into quarters, remove the stem, seeds and white skin and cut into strips.

Heat some sesame oil in a pan and sauté the vegetables. Add the beef strips and roast well. Now stir in the cooked quinoa. Pour the rest of the marinade on top and let it sit for a while, covered.
