Original Potato Salad

For the original potato salad boil potatoes in salted water until soft. Drain and let cool for about 15 minutes. Peel while still lukewarm and cut into the salad bowl.

Finely chop onions. Sauté 1/3 of them in butter until translucent. Add 15 ml of water and bring the chicken soup to a boil. Pour the soup through a sieve over the potatoes and season a little with salt.

Mix vinegar and yolk and add to the potatoes. Spread 5 tbsp sunflower oil or other vegetable oil evenly over the top. Chop the chives and add them together with the rest of the chopped onions.

Mix everything with your hands and let it sit for at least 1 hour with the lid closed. Mix again and season the original potato salad with salt and vinegar if necessary.
