Instructions:

For the elderberry soup, put some elderberries aside, boil the remaining berries with water and let the berries steep in it for 5 minutes.

Then strain and put the berries in a bowl.

Peel the onion and cut it into thin strips. Finely dice the bacon and sauté in hot oil. Extinguish with red wine and add the elderberry puree.

Cut the pumpkin in half, quarters, eighths, peel, remove the seeds and cut the flesh into bite-sized small cubes.

Add the pumpkin cubes to the soup and season with ginger powder, juice, lemon, salt and pepper, simmer quietly for 15 min.

Dice the cooked potatoes, peel the garlic, cut into thin slices, fry both in oil.

Serve the elderberry soup with the roasted potato cubes and garlic, decorate with the elderberries and rosemary and tarragon.
