Herring Salad with Egg, Cucumber and Potatoes

Instructions:

Peel the potatoes and cut into cubes with an edge length of approx. 2 cm.

Steam until still slightly tender, mix with the olive oil, salt a little and leave to cool.

Peel the cucumber, cut in half lengthwise, scrape out the seeds with a spoon and dice the flesh as well. Rinse the matjes fillets, dab dry and cut into small pieces. Wash the dill, shake dry and chop the leaves.

Mix potatoes, cucumber, matjes and dill with vinegar, sugar and mustard. Season with salt and pepper.

Peel and slice the eggs and arrange as a bed on small plates.

Spread the matje salad on top and garnish with bunches of dill.
