Try this delicious pasta dish:
– P. Hildebrandt Sift flour and semolina together on a work surface and press a bulge in the center. Mix the egg with the yolks, olive oil and a tiny bit of salt and shape into the bulge. Mix the egg mixture from the inside to the outside with a little bit of flour.
Add the basil and a little bit of chili spice and knead the rest of the flour well. Form the dough into a ball and let it rest for about 2 hours, wrapped in cling film.
Roll out the dough very thinly with a pasta machine or pasta walker and cut into fine ribbon noodles. Cook these in boiling hot water for 3 minutes until al dente.
Drain the pasta well and toss briefly in a frying pan in hot olive oil. Finally, season lightly with salt.
