Instructions:

Place herrings in cold water for one night to draw out excess salt.

Brush off the potatoes. Make in a saucepan covered with water 25 to half an hour. Drain, rinse and peel. Cool and cut into slices 5 mm thick. Place in a suitable bowl.

Cut the herring heads into small pieces. Remove skin and center bone, rinse fillets under cold water. Pat dry. Peel, quarter and core apple. Cut herring fillets, apple and gherkins into 5 mm thick, 3 cm long strips. Add to potatoes form. Pour clear soup over potatoes. Cool.

Mix pepper, wine vinegar, salt and sugar, pour over lettuce. Mix carefully, refrigerate for sixty minutes with lid closed.

In the meantime, dice the bacon. Peel onion, chop finely. Fry bacon in a frying pan, add onion and fry until golden. Pour hot over the leaf salad before serving.

Our tip: Use bacon with a fine, smoky note!
