For the eggnog cake, beat the eggs one by one until frothy. It should be a creamy white mass. Stir in the powdered sugar and vanilla sugar. Add eggnog and oil.

Mix flour, potato starch and baking powder well and fold in carefully. Preheat the oven to approx. 175 °C.

Grease a large baking pan (I usually use one large cake pan and 2 small children’s molds) and pour in the mixture.

Bake in the oven for approx. 40 minutes – don’t forget to check the needle! Let cool and turn out.
