Instructions:

Clean the peppers and cut them into very fine strips like the onions. Clean gooseberries. Pit apricots, cut into fine slices. Clean the celery and slice very finely. Fry mustard and coriander seeds with peppercorns in a frying pan.

Bring vinegar with sugar and roasted spices to a boil. Add paprika powder and strips, celery and onions and cook for 5 minutes, stirring. Add gooseberries and apricots and cook for 3 minutes. Season relish with salt, mold into sterilized jars with twist-off lids, seal and turn upside down for 5 min. Keeps sealed in about 1 year.

Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
