Instructions:

Soak the bread roll in warm water. Finely chop the onion and 2 (!) cloves of garlic. Heat some olive oil in a pan and sauté onions and garlic until translucent.

Deglaze with sherry and put aside. Knead the minced meat with the eggs and the squeezed, crushed bread. Mix in the onion-garlic mixture and the finely chopped parsley, season with salt and pepper.

Form small balls from the mixture with wet hands and roll lightly in flour. Finely chop the remaining garlic cloves and heat in olive oil.

Add the bay leaf and fry the meatballs until golden brown all over. Remove, pat dry with paper towels and serve.
