Instructions:

1. wash off the scampi. Score the shells on the back with a kitchen knife, remove the intestines. Preheat oven to 250 °C.

Cut onions and garlic into small cubes. Blanch (scald) tomatoes, skin, remove stalks, and dice.

Heat oil in a frying pan over medium-high heat and sauté onions and garlic until translucent. Add bay leaf spice and tomatoes, sauté for five minutes until soft. Add the wine, season the sauce with sugar, salt and pepper. Cover and simmer on low heat for ten minutes. 4.

Distribute the crayfish tails evenly in the sauce. Cook for four minutes.

Put everything in an ovenproof dish. Cut the feta cheese into slices or crumble coarsely, cover the dish with it. Bake in the oven for ten minutes and serve on the spot.
