Clean and halve the leek and clean under running water. Clean the carrots and cut them into small slices, remove the peel from the potatoes and cut them into quarters.

Melt the butter in the saucepan and add the carrots and leek, sauté for a few minutes. Pour the water and add the potatoes and cook them together. Finally, add the crème fraîche and season with vegetable broth, salt and pepper, but do not let it boil anymore.
