To cook apples from the oven, peel the apples, remove the core and slice the apples.

Cook in a large pot just covered with water until soft.

Pour the apples through a sieve (reserving the juice) and strain through the sieve.

Pour the puree into an enameled pot and add the apple juice. Add sugar and spices to taste.

Bring to the boil once and put the pot in the oven.

Let the puree set at 120 °C, which takes about 4 hours.

The apple boil from the oven goes well with sweet casseroles or curd dumplings.
