Instructions:

For the Raffaelo cupcakes, melt the white chocolate coating with the butter over a water bath.

Preheat the oven to 180 °C. Meanwhile, sift the baking powder with the flour.Beat the eggs with the sugar and vanilla sugar until the volume has clearly doubled. Gradually stir the dry ingredients into the egg mixture. Fold the melted white chocolate into the mixture and mix well.

Fill a muffin tin with paper cups and place on a baking sheet. Divide the cupcake mixture evenly among the cups and bake in the preheated oven for about 20 minutes. Remove the cupcakes from the oven and let cool completely before spreading the topping on top.

For the topping, mix the cream cheese with the powdered sugar, the coconut flakes and a dash of rum.Pour the coconut topping into a piping bag with a smooth nozzle and pipe it onto the cupcakes like a cup.

Fill a bowl with coconut flakes and carefully dip the Raffaello cupcakes with the topping into the coconut flakes.
