For the wan tan dough, knead together the wheat flour, eggs, salt and a few drops of tap water to form a smooth noodle dough; let rest 1/2 hour.

In portions, using a pasta machine or on a lightly floured work surface, roll out like a swirl until paper-thin; cut out evenly sized squares.

Stack the sheets, dusting them thinly with flour in between so they don’t stick together. Cover with damp kitchen paper to prevent the wan tan leaves from drying out and becoming brittle.
