For the Malakoffnockerl in a jar, first mix cornstarch with the yolks and a small dash of milk and set aside. Cut the vanilla bean lengthwise and scrape out the pulp with the back of a knife. Heat the pith and vanilla bean with the milk in a small saucepan. Stir in sugar and salt and bring to a boil. Quickly stir in the starch-vanilla mixture and remove from heat. Stir until cold in a cold water bath and stir in the mascarpone.

Mix the rum with the water and prepare glasses. Pour the vanilla mascarpone cream into a piping bag. Cut the biscuits in half.

Now fill the glasses with a little cream. Dip the biscuits briefly in the rum water and place on top of the cream. Repeat the process up to the top.

Garnish the Malakoffnockerl in the glass with chocolate shavings and refrigerate until serving.
