Instructions:

The boiled or steamed potatoes are mashed while hot.

The butter (I) is stirred until creamy and mixed with salt, egg yolk, potato whites and nutmeg.

Finally, fold in the snow and pour the mixture into a well greased (butter (Ii)) ring mold.

Bake it on the stove, turn it out onto a flat round baking dish and fill the ring with meat or mushroom ragout.
