Instructions:

For the mead or honey wine, heat the fennel, honey, anise and very little wine until the honey dissolves.

Leave to infuse, sealed, in the ice chest for 5 days.

Add the rest of the wine and leave to infuse for another day in the ice chest.

Drain through a sieve and serve the honey wine.
