For the sour cherry cold dish with curd cream, remove the seeds from the sour cherries and heat slowly in a saucepan with red wine, cinnamon, cloves and a little honey and/or sugar. Let steep for 5-10 minutes at very low heat.
Mix the pudding powder with very little water, stir into the sour cherries and heat vigorously once. Remove from heat, season with a dash of red wine liqueur and chill the sour cherries.
Meanwhile, in a bowl, whisk the egg yolks with sugar and vanilla sugar until very foamy. Add the curd cheese and crème fraîche, mix well and season with a dash of rum and some lemon juice. Also chill briefly.
Then arrange the curd cream in pre-chilled glasses, spread the cold sour cherries on top and garnish each with 2 biscotti.
Grate a little chocolate over the top and garnish the sour cherry cold dish with curd cream with fresh mint.
