Instructions:

For the pepper nuts, first mix the flours with the baking soda, the grated almonds and the spices.

Make a pit in the middle and put the liquid honey, lemon juice and egg in it. Form everything into a dough. Wrap in plastic wrap and let rest in the refrigerator for 1 day.

Form small rolls and cut off pieces the size of a nut. Roll in your hand and flatten slightly. Place the pepper nuts on a greased baking sheet. Don’t crowd them as they will get bigger. Brush with milk.

Bake the pepper nuts at approx. 150 °C convection oven for about 20 minutes. Let them cool and dip the top half into the glaze made of lemon juice, powdered sugar and white pepper.

When the glaze is dry, store in a cookie tin.
