Instructions:

For baked celery, brush the celery bulb, wash well and boil in a little salted water not too soft.

Peel, cut into slices (about 1/2 cm thick), halve if necessary. Dredge in flour, pass through beaten eggs and coat with breadcrumbs.

Fry in clarified butter or float in fat. Drain from fat.

Baked celery is best served with potato salad, mayonnaise or green salad.
