For the turkey cutlets, whisk the eggs in a soup plate and add a few squirts of lemon juice. Wash the cutlets and dry them with kitchen paper.

Season the meat on both sides with pepper and salt, then turn first in flour, then in egg and finally in the breadcrumbs.

Fry in butter in a frying pan.
