Remove the skin from the asparagus spears and cook them in light salted water until al dente. Remove asparagus spears from salted water, rinse under cold running water and drain well.

Place beef roulades on the surface and season with salt and pepper. Place a slice of ham and a spear of asparagus on each of the roulades and roll the meat together. Fix the roulades with a wooden stick, brush with oil. Fry the roulades on a hot grill until crispy on all sides. Arrange on a plate and keep warm.

In the meantime, melt the butter for the sauce. Stir in the flour. Add the wine and milk and bring to the boil while stirring. Add the cheese and continue to gently bubble until the sauce becomes creamy. Season to taste with salt and freshly ground pepper. Pour the cheese sauce over the roulades and bring to the table.
