A great cake recipe for any occasion:
Beat butter vigorously until light and fluffy. gradually add sugar, lemon rind and eggs .
Mix flour and almond kernels and add. Quickly knead into a smooth dough. Wrap in plastic wrap and let rest for fifteen min.
Roll out the dough on the lightly floured surface to about 5 mm thick. Pierce shapes to taste and place on a baking sheet lined with parchment paper.
Bake the Almond Mailänderli in the oven heated to 180 °C on the second lowest shelf for about fifteen minutes.
Mix the egg whites. Brush the Mailänderli with it while they are still warm and dust with fine sugar.
