For the shortbread poppy seed cake, first knead butter, sugar and egg whites with flour, baking powder and cinnamon. Divide the dough into thirds and place two thirds on the bottom of a greased pan. Bake for 10 minutes in a preheated oven at 180 degrees.

For the filling, bring the milk and sugar to the boil, add the semolina, bring to the boil and remove from the heat. Leave to stand for 10 minutes.

Take the cake out of the oven, roll out the rest of the dough, cut out bunnies (or any other shapes) and form a rim from the rest of the dough in the cake form.

Mix the grated pear, poppy seeds, almonds, raisins and lemon zest into the semolina. Spread this mixture on the cake base, cover with bunnies, brush them with egg yolk and bake the short poppy seed cake for another 60 minutes at 180 degrees.
