Soak salmon fillet (cut into small pieces) in 1/2 tsp salt, 1 tsp sherry, a quarter tsp pepper 1 tbsp flour for about 15 min. Fry salmon flies in hot oil in portions for about 10- 20 seconds. Cut spring onions into 3 cm thin strips. Heat a wok and add 3 tbsp. oil. Add the garlic and fry briefly. Then add paradeis pulp, sugar, sherry, soy sauce, oyster sauce, salt and the fish and steam with the water or clear soup on low heat. Mix the cornstarch in 6 tablespoons of water and thicken the sauce with it. Fold in the spring onions and drizzle with sesame oil.
