Season the roulade and spread with horseradish. Finely dice the apple. Sprinkle (1) of them on the roulade, roll up and pin. Sprinkle remaining apple cubes with juice of one lemon.

Remove peel from onion and dice. Heat fat. Fry roulade and onion cubes in it. Add water and steam for about 45 minutes. Cook potatoes for 20 minutes.

Cut chicory into strips. Add to meat with remaining apple cubes 5 min before end of cooking time. Thicken the stock with a little Diät-Bindefix.

Tip: Instead of clarified butter you can also use butter in most cases.
