Indian Semolina Dish with Caramel Taste

Bring the milk to a boil in a saucepan over medium heat. Then, over medium-low heat, melt the sugar in a medium bowl. Stir constantly so that the sugar does not burn. As soon as the melted sugar turns light brown, reduce the heat. Slowly add the hot milk. The sugar will crystallize on the spot. Crush some of the crystals, stir and boil down on a low flame, allowing the crystals to dissolve. Wash out the saucepan used at the beginning and heat the butter over low heat. Toast the semolina in the butter for 15 minutes, stirring, until it turns slightly brown. Then turn the flame down to the lowest setting. Add the raisins, the orange zest and the juice of the caramel milk and slowly pour this mixture into the semolina. Stir once or possibly twice to break up any lumps. Cover the saucepan tightly and continue to simmer on its own heat for a few minutes until the semolina has absorbed all the liquid. Remove the lid and stir a few times to loosen the halava and evenly distribute the raisins.
