For the bagels, mix the flours, press a hollow in the middle and crumble the yeast into it. Mix with lukewarm water, 1 teaspoon salt and sugar and knead well. Cover and let rest in a warm place for 1 hour.

Knead the dough again, form a roll and divide into 12 equal pieces. Shape pieces into a ball, poke a hole with your finger and circle around until you get the typical FOrm.

Cover and let rise again. Preheat oven to 200 °C. Line baking sheets with paper. Bring a pot of salted water to a boil and let the bagels boil once in it until they rise to the surface.

Take them out with a sieve scoop, put them on the baking tray and brush them with egg. Bake bagels for about 20 minutes.
