Instructions:

Season milk with a pinch of salt and bring to a boil with the margarine in a small saucepan. Whisk in the flour, bring to a boil and stir until the mixture separates from the saucepan and the wooden spoon. Beat eggs well and slowly stir into the mixture while it is still hot. Stir in Parmesan, Emmental, diced ham, pistachios and seasonings and let mixture cool. Form into small balls with lightly floured palms and coat in flour, beaten egg and breadcrumbs. Heat sufficient oil and fry the balls for about 5 – 6 minutes until golden brown. Drain and serve hot.
