For the Peanut Chickpea Sauce with Grilled Zucchini, preheat the oven to 180 °C grill function. Dice the zucchini and place in a bowl.

Mix olive oil with crushed garlic and pour over zucchini cubes, toss everything thoroughly, place on a baking sheet and grill in oven until brown (about 25 minutes).
