For the pineapple coconut muffins, beat the eggs and sugar until foamy. Stir in the buttermilk and butter and stir again briefly.

Drain the pineapple well (if canned) and cut into small cubes, otherwise peel the pineapple, remove the stalk and cut the flesh into small cubes.

Mix flour and baking powder. Stir in the pineapple cubes and grated coconut. Finally, stir in the flour. Divide the batter among the muffin cups and bake the pineapple coconut muffins in the preheated oven at 180° for approx. 25 – 30 minutes.
