Instructions:

Melt butter in a frying pan and add shallot cubes. Put the cod fillet on top and pour in white wine, cover and steam for about 10 minutes until soft. Remove the fish and keep warm.

Add mustard and whipped cream to the fish stock and reduce to one third. Season with salt, pepper and a little sugar.

Arrange the fish, strain the sauce and pour it over the fish.
