Place the matie fillets in a bowl and pour mineral water over them. Soak for at least 30 minutes. Remove, drain and dry with household paper. Stir sherry with sugar until sugar is dissolved. Crush peppercorns, allspice seeds and juniper berries in a mortar until medium fine. Fill a deep oval platter with some of the sherry and arrange the matie fillets in two layers on top. Sprinkle both layers with spices. Drizzle with a tiny bit of oil and top with onion rings and dill sprigs. Drizzle remaining sherry over each. Cover the dish with cling film or aluminum foil and marinate the matie fillets for at least 24 hours. During this time, turn them repeatedly to the other side. Serve with fried potatoes.

Tip: Cook only with high-quality spices – they are the be-all and end-all of a good dish!
