For stuffed veal roulades, first peel and finely dice onion. Cut mushrooms into small pieces. Cut ham into strips. Salt and pepper the pounded veal cutlets on both sides.

Melt the butter in a pan and fry the onion cubes in it. Add mushrooms, ham, chili and sage, salt and pepper. Mix in the cheese.

Spread the filling on the cutlets and roll them up. Secure with kitchen twine or toothpicks.

Fry stuffed veal roulades in hot oil on all sides for a total of about 8 minutes.
