Cut the pumpkin flesh into pieces and soften in a little water with the lid closed at a medium temperature for about 15 minutes. Next, preheat the oven to 200 degrees. Drain the cooked pumpkin, crush and mix with whipped cream, eggs and vanilla sugar.

Turn on the broiler in the oven. Sprinkle the sugar in a medium ovenproof dish (or in serving dishes) and broil for a few seconds until it caramelizes. (If the stove does not have a broiler: Melt sugar with 1 tbsp water in a fireproof dish while on the fire, stirring, until it caramelizes. It should not get too dark, otherwise it tastes bitter). Turn on the oven again to 200 °C. Fill the pumpkin mixture into the mold or small ramekins, put them in the oven and bake for half an hour until the amount is set. Cool before serving.

Traditionally Spanish, pumpkin-infused flan is one of the most popular desserts in Creole cuisine.
