For the lemon key muffins, preheat the oven to 180 °C. Mix the flour with the baking powder in a bowl. Whisk the eggs in a 2nd bowl.

Grate the zest of the limes and squeeze the limes. Combine the remaining ingredients with the eggs, mix well and sift the flour and baking powder mixture on top.

Stir in the flour briefly. Fill the muffin tin 2/3 full with the batter. (Use either a greased muffin tray, paper cups or silicone mold).

Bake the muffins for 25- 30 minutes (test with a stick). Let the finished muffins cool on a cooling rack.
